Lavandula, commonly known as lavender, is a genus of 39 species of flowering plants in the mint family, Lamiaceae. It is native to the Old World and is found from Cape Verde and the Canary Islands, southern Europe across to northern and eastern Africa, the Mediterranean, southwest Asia to southeast India. Many members of the genus are cultivated extensively for ornamental, culinary, and essential oil extraction purposes.
Lavender grows naturally across several regions including southern Europe, northern and eastern Africa, the Mediterranean region, southwest Asia and southeast India. The plants are widely cultivated in temperate climates around the world. They are grown for garden and landscape use, as culinary herbs, and commercially for extracting valuable essential oils.
The genus includes annual or short-lived herbaceous perennial plants as well as suffrutescent perennials, subshrubs or small shrubs. Leaf shapes vary widely across the genus, ranging from simple leaves to pinnately toothed or dissected forms. In most species the leaves are covered with fine hairs or indumentum which contain the essential oils.
Flowers are borne in whorls on spikes that rise above the foliage, and in some species these spikes may be branched. The flowers can be blue, violet or lilac in wild species and sometimes appear blackish purple or yellowish. Lavender oil is obtained through steam distillation of freshly cut flowering tops and stalks of Lavandula officinalis. The plant may grow wild or be cultivated and is native to Mediterranean countries. This distillation process captures the aromatic compounds present in the flowers and stalks.
Distillation mainly takes place in the south of France where lavender plants grow at medium altitudes of mountainous regions ranging from about 600 to 1500 meters. Distilleries located at higher altitudes produce oils that contain higher ester content. High-altitude distillation also results in lower temperature boiling during the process.
High-altitude distillation helps produce oil with higher ester content because the plants growing at these elevations naturally contain more esters. In addition, distillation temperatures remain lower due to reduced boiling points at higher altitudes. As a result, the distilled oil is exposed to steam temperatures of around 92–93°C instead of 100°C.
Lavender oil, especially the French type, is a colorless or pale yellow liquid with a sweet floral-herbaceous and refreshing aroma. It also has pleasant balsamic-woody undertones. The oil initially shows an almost fruity-sweet top note that fades quickly and overall the oil is not known for strong odor tenacity.
