Licorice, also known as Licorice Extract, is derived from the roots and rhizomes of the Glycyrrhiza glabra plant, a leguminous herb cultivated primarily in Spain, Italy, Turkey, and parts of Asia Minor including India. The root is valued for its intense sweetness and characteristic flavor profile.
The two principal varieties are Glycyrrhiza Glabra Typica, commonly referred to as “Spanish Licorice,” and Glycyrrhiza Glabra Glandiflora, often known as “Russian Licorice.” These varieties differ slightly based on cultivation region and root characteristics.
Licorice Extract is produced by preparing an aqueous extract of the root and evaporating it, traditionally over open fire. The result is a black, brittle mass with a sweet, mildly spicy, and caramel-like aroma.
Licorice Extract is extremely sweet due to the presence of Glycyrrhizin, which is approximately 50 times sweeter than sugar. It has a root-like, slightly spicy, caramellic body flavor and may create a faint scratching sensation in the back of the mouth.
Glycyrrhizin is the primary compound in Licorice that gives it its characteristic sweetness. It is about 50 times sweeter than sugar and is combined with ammonia in the root. However, it can color any aqueous solution it is used in, producing a strong brown color.
