Lavender, scientifically known as Lavandula, is a genus of flowering plants in the mint family, Lamiaceae. It is native to the Old World, specifically found in regions from Cape Verde and the Canary Islands to southern Europe, northern and eastern Africa, the Mediterranean, southwest Asia, and southeast India.
There are 39 species of Lavender, including both annual and short-lived perennial plants as well as suffrutescent perennials, subshrubs, or small shrubs.
Lavender flowers are typically blue, violet, or lilac in wild species. The flowers grow in whorls on spikes that rise above the foliage, with the spikes sometimes being branched. Some species also produce colored bracts at the apices.
Lavender oil is produced through steam distillation of the freshly cut flowering tops and stalks of Lavandula officinalis, a plant native to the Mediterranean. The distillation primarily takes place in the south of France, where the plants grow at medium altitudes of 600 to 1500 meters.
Lavender oil produced at higher altitudes is believed to have a higher ester content due to the lower-temperature distillation process. The lower temperatures during distillation (92–93°C) help preserve the delicate aromatic compounds, creating oils with a higher ester content.
Lavender oil is a colorless or pale yellow liquid with a sweet, floral-herbaceous odor, accompanied by a pleasant balsamic-woody undertone. It has a short-lived fruity-sweet top note, and the oil is not distinguished by its tenacity.
Lavender oil is widely used in colognes, especially citrus-based colognes, and in perfumes like fougères, chypres, and ambres. It is also found in many floral and semi-floral fragrance compositions.
